Christmas party nibbles - Delia Smith's Christmas

pinch and lemon fish cakes

Ingredients

* 300g mashed potato
* 100g flaked and cooked cod
* zest and juice of 1/2 lemon
* good handful of fresh spinach, finely chopped
* 100g fresh brown breadcrumbs
* salt and freshly ground black pepper
* low-fat yogurt and chives to garnish

Cooking Instructions

1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Mix together the fishcake ingredients, seasoning with salt and pepper, then form into 16 small balls.
3. Roll the balls in the crumbs and, with a palette knife, mould into fishcakes.
4. Place them on a non-stick baking tray and cook in the oven for 5 minutes.
5. Top with yogurt and chives.

Lamb and apricot kebabs

Serves 12

Per Kebab

Ingredients

* 6 dried apricots, soaked overnight in boiling water
* 100g lean lamb steak, diced
* soy sauce

Instructions

1. Cut each apricot into 4.
2. Take 12 cocktail sticks and thread 2 pieces of apricot and 1 piece of lamb on to each stick.
3. Place on a non-stick baking tray and drizzle with soy.
4. Cook under a hot grill for 1-2 minutes. Serve hot or cold.
